Japanese Cuisine 101

SashimiHere's a crash course on Japanese food...

Teppan-yaki is derived from the words "teppan" meaning iron plate, and "yaki" which means fried or broiled. And so, teppan-yaki uses an iron grill (teppan) to cook food.  You will see a lot of smoking flipping good food in our teppan as this is our main attraction.

Bento means box.  Bento are Japanese “take out” style meals that can trace their roots back about a thousand years!  Food is arranged in orderly little lacquer boxes.  They make dining-in or taking-out easy.  Order one and you’re set to go.

Miso soup is a traditional Japanese soup that is made from fermented soy beans.  Did you know that it takes 10 months to a year for miso to be ready to use for cooking?  Miso soup is usually served at the beginning of a meal.

Another favourite at Mt. Fuji are the udon noodles.  We offer them in hot soup.  They are made of thick wheat flour noodles and are perfect for filling up hungry stomachs.

To complete a meal, classic tempura is fail-proof.  Fried battered shrimp or vegetables are an excellent addition to any meal, or even as a light snack.

Now we define the confusing bits.  Maki is "rolled."  It is often rice and other ingredients (e.g. avocado, steamed egg, etc.)  rolled into a seaweed wrap, then sliced into bite-sized pieces.  Sushi are little clumps of rice prepared with rice vinegar and topped with fish or other seafood like shrimp.  Sashimi is sliced raw meat served without rice, usually seafood.  These are all very distinct but very delicious items.  If you are adventurous, try the salmon sashimi.  If not, California maki is always a safe bet.  Maki, sushi, and sashimi are always served with wasabi, a green-coloured Japanese horseradish.

So remember, maki is “rolled”, sushi are “clumps”, sashimi is “raw”, and wasabi is “hot.”  Keep that in mind, and you are well prepared for the cuisine of Japan and Mt. Fuji.
