The first Mt. Fuji outlet was opened in 1999 at the Telus Building in Edmonton by long-time sous chef Ross Quiñones.  With just three other employees, Ross nurtured a line of hungry lunch customers -- with Mt. Fuji's teppan-yaki and original sauce made fresh from scratch.

In no time, Mt. Fuji customers started to demand lunch as well as supper!

Due to Mt. Fuji's growing popularity, the Telus location could no longer contain the faithful customer base.  Mt. Fuji sold its Telus location and opened a new restaurant in Namao Centre, where it is currently located.  Ross and his partners built up the new Namao location, taking no salary for the first three months and working morning and night, to ensure that customers received the great taste and excellent service that Mt. Fuji had become famous for. 

Currently, Mt. Fuji employs two sushi chefs, nine full-time staff, and six part-time employees, and is always looking for new hires.  The restaurant comfortably seats forty people dining in and offers "food to go." 

Mt. Fuji management and staff are proud of their speed of service, consistent quality, and affordability.
